Breakfast On-The-Go: Skinny Lemon Blueberry Poppy Seed Muffins

So, my roommate and I are really trying to be as healthy as we can this year! You know, being senior year and all, we want to look our best for graduation and whatever may come our way after our time here is up! So, knowing that breakfast is one of the most important meals of the day, we decided to make these amazing Lemon Blueberry Poppy Seed Muffins… The best part about these muffins, you wonder? They’re skinny and they still taste absolutely delicious!  Even if you always find yourself rushing out the door in the morning, you should always make sure you have at least something in your belly (I am a huge advocate of having coffee as my breakfast, but I know that is not the healthiest way to go, so this year I am working on having a little something in the mornings!!).  


1 C. Flour
1 C. Whole Wheat White Flour
1/2 Tsp. Salt
1 1/2 Tsp. Baking Powder
1/2 Tsp. Baking Soda
1/4 C. Sugar
2 Tbsp. Poppy Seeds
2 Egg Whites
1/4 C. Oil
1/4 C. Unsweetened Applesauce
1 C. Plain Fat Free Greek Yogurt
1/4 C. Honey
1 Lemon, Juiced & Zested
1 C. Blueberries


  • Preheat the oven to 375 degrees F.
  • Lightly spray and/or line a muffin tin for 12 muffins. In a medium bowl, whisk together the flours, salt, baking powder, baking soda, sugar, and poppy seeds.

  • Set aside. In a large bowl, whisk together the egg whites, oil, applesauce, yogurt, honey, lemon juice, and lemon zest.
  • Add the flour mixture to the egg mixture and stir just until combined.
  • Gently fold in the blueberries.

  • Bake for 16-18 minutes or until toothpick inserted comes out clean. Cool on a wire rack.

Put Your Own Spin On Things…

That is the exact recipe that I got off Pinterest, however we decided to make a few little changes to my muffins!  Instead of doing ¼ cup oil and a ¼ cup applesauce, we used a ½ cup applesauce (oil makes them a little greasier and adds calories!).  We also used honey flavored Greek yogurt, instead of the plain (just because that’s what I had!). And, rather than using both types of flour, I just used 2 cups of regular flour (I know the whole wheat flour is a lot better for you, but I didn’t want to buy both so I just used the one!).  But, the muffins came out great and they’re super yummy… not too much lemon, but just enough to taste it! And, you don’t have to feel bad about eating them.

There you have it guys! They’re also so easy to make, which makes it even easier (and gives you less of an excuse not to make them!) for all of you busy bee’s!
