OOTD: Workout Wednesday



Happy Wednesday Lovelies!

I hope you are all keeping warm during this crazy wintery tundra we are experiencing! Having snow days is so nice, but I am so ready for all this snow to be out of the way so we can get on with our everyday life! But, anyway… How are you all doing with your New Years Resolutions?! Getting into the fourth week in January now, I am sure some of you may have fallen off the wagon or are getting ready to do so, but I am here to tell ya to get back on and stick it! My roommate, Kasey, and I have been doing so well with out new workout and diet regimen and I promise, you will just feel so much better if you stick with it! While I am not doing it to necessarily lose weight, I would just like to get a little healthier, I know whatever your reasons for diet and exercise may be, you will feel so much better both physically and emotionally if you make yourself stick it out! And to make it a little easier, here is an awesome workout outfit to motivate you to get your skinny booty to the gym!

I know that going to the gym or getting a little workout in is the last thing we want to do when we have a million other things we need to do in getting ready for the holidays, but just think about that little outfit you want to wear on New Years Eve when you are trying to think of an excuse not to go, and make a little time for the treadmill!

It’s so adorable… I would drop what I was doing just to be able to wear the workout outfit, but that is always my inspiration for working out (if I can’t think of anything else…)! I just absolutely love workout clothes, not only are the super  comfy, but they make me look so sporty so even if I am not going to the gym right then, people think I am and they think I am so skinny… Hahaha (just a little confession… I probably shouldn’t tell people that, but consider yourselves lucky!)

I know its been a long week already, and a tough one at that, but there’s no time like the present to get back into the swing of things and hit the gym! I know we all ate tons and tons of turkey and pie, so we def need to get back to the treadmill and burn those cals before Christmas cookies start coming out!

What better inspiration to hit the gym than the upcoming holiday season? I know it is a busy time of year for everyone (especially this week…) but this time of the year is one of the most important times to make sure you aren’t skipping any gym sessions! It is so easy to lose sight of your goals and progress with the holiday season coming, putting off the gym until January with all of the other New Year’s Resoultioners, but that is not the way to go, ladies! Trust me, you will regret this! So, take a half hour out of your day and hit the treadmill (or whatever machine you like to frequent!) With that being said… this week’s Workout Wednesday:

 Happy Hump Day… Hit The Gym!!!

Wow… Where has the week gone?! It’s already Wednesday!! Don’t let the stress from the past two days of work (or, if you’re like me, school…) stop you! Get your little booty to the gym and make sure you’re looking your best for the weekend that is coming quickly!

This Workout Wednesday is an especially special one for me, because one of my roommates (and best friends) is turning 22 today!! Happy birthday Michele!

Okay, so you’re probably thinking “…why would an iPhone ever go with a workout outfit?!” and I don’t blame you because if I just saw this somewhere, I would say the same thing! But, add your music to your phone (rather than an iPod or an MP3 player) and you can have your phone with you while you workout (perfect for safety reasons if you’re running or exercising outside!) and you can have your music without having to worry about carrying them both!  One thing I like to do, is bring my phone (or sometimes even my iPad if I’m feeling bold!) to the gym with me and watch an episode of one of my favorite shows while I run! It makes the hour fly by and you forget you’ve been running for that long!

I hope you all have a wonderful day today, and get a quick workout in! Even if you’re super busy, just 15 or 20 minutes is better than 0! Take advantage of this beautiful weather while it’s still here and go for a run outside or do something outdoors that you won’t be able to when winter hits!

Breakfast On-The-Go: Skinny Lemon Blueberry Poppy Seed Muffins

Don’t Skip The Most Important Meal Of The Day… Especially When It Can Be So Easy!

So, my roommate and I are really trying to be as healthy as we can this year! You know, being senior year and all, we want to look our best for graduation and whatever may come our way after our time here is up! So, knowing that breakfast is one of the most important meals of the day, we decided to make these amazing Lemon Blueberry Poppy Seed Muffins… The best part about these muffins, you wonder? They’re skinny and they still taste absolutely delicious!  Even if you always find yourself rushing out the door in the morning, you should always make sure you have at least something in your belly (I am a huge advocate of having coffee as my breakfast, but I know that is not the healthiest way to go, so this year I am working on having a little something in the mornings!!).  


1 C. Flour
1 C. Whole Wheat White Flour
1/2 Tsp. Salt
1 1/2 Tsp. Baking Powder
1/2 Tsp. Baking Soda
1/4 C. Sugar
2 Tbsp. Poppy Seeds
2 Egg Whites
1/4 C. Oil
1/4 C. Unsweetened Applesauce
1 C. Plain Fat Free Greek Yogurt
1/4 C. Honey
1 Lemon, Juiced & Zested
1 C. Blueberries


  • Preheat the oven to 375 degrees F.
  • Lightly spray and/or line a muffin tin for 12 muffins. In a medium bowl, whisk together the flours, salt, baking powder, baking soda, sugar, and poppy seeds.

Dry Ingredients For Lemon Blueberry Poppy Seed Muffins

  • Set aside. In a large bowl, whisk together the egg whites, oil, applesauce, yogurt, honey, lemon juice, and lemon zest.
  • Add the flour mixture to the egg mixture and stir just until combined.
  • Gently fold in the blueberries.

All Ingredients Mixed Together Ready To Be Scooped Into The Pan And Baked


Muffins In The Pan, Ready To Bake - Skinny Lemon Blueberry Poppy Seed

  • Bake for 16-18 minutes or until toothpick inserted comes out clean. Cool on a wire rack.

Put Your Own Spin On Things…

That is the exact recipe that I got off Pinterest, however we decided to make a few little changes to my muffins!  Instead of doing ¼ cup oil and a ¼ cup applesauce, we used a ½ cup applesauce (oil makes them a little greasier and adds calories!).  We also used honey flavored Greek yogurt, instead of the plain (just because that’s what I had!). And, rather than using both types of flour, I just used 2 cups of regular flour (I know the whole wheat flour is a lot better for you, but I didn’t want to buy both so I just used the one!).  But, the muffins came out great and they’re super yummy… not too much lemon, but just enough to taste it! And, you don’t have to feel bad about eating them.

There you have it guys! They’re also so easy to make, which makes it even easier (and gives you less of an excuse not to make them!) for all of you busy bee’s!
